Eyebrows were raised when Robert Kranenborg shut up shop at La Rive and made way for Edwin Katz. But those holding their breath to see if the successor could maintain the Amstel Hotel’s elegant and classic ambience can breath easily as it’s as good as ever. The banks of the river Amstel is the perfect quiescent setting for one of Amsterdam’s popular romantic haunts with the 15-table room of deep honey-coloured wood and Old Master-style paintings adding to its’ olde world charm. A wall of windows 10 feet from the Amstel offer breathtaking ground-level views of the water, the passing boats and the city's lights, shimmering Monet-like on the gentle current Diners are greeted with smiles and good cheer, that remain constant and letter perfect throughout the service. Katz has maintained the two Michelin Stars assigned to the restaurant by offering offers dishes that take the finest ingredients and combine them in unusual and often unique ways that highlight the essence of their flavours -- subtle and deep, never overwhelming but always distinct. The chef’s skill is unflinching, as must his confidence be, offering dishes like a terrine of Jabugo ham, foie gras and simmered beef with oxtail jelly and Sichuan pepper, a thinly sliced 25 ultra-narrow layered design of architectural beauty and simplicity. The accompanying two-volume wine list ranges from Grand Cru to Napa and Sonoma, Spain, Italy, Chile, Australia, New Zealand and South Africa, designed, says the restaurant's sommelier, Ted Bunnik, to be well-balanced, not too overwhelming and to complement to the dishes. We’ll certainly drink to that!
